Description
The wines of Les Couarres open up with time. They are certainly the wines that require the most rigour in supervising their maturation. Their "clayey", delicate and sticky texture makes it necessary to avoid as much as possible a rapid absorption of oxygen during the ageing process. The wines of Les Couarres are characterised by a spherical 'stickiness' on the palate, followed by freshness with medium acidity on the finish. The differences between the tuffaceous and clayey parts mainly concern a more stony environment for one (the tuff) and a cooler, tighter environment for the other (the clay).

The family's wine-making tradition traces back to 1490, with Nicolas Taillet and Fiacre Taillet in 1540. In 1700, a second Fiacre Taillet, a learned winegrower, wrote his memoirs recounting his life and all the important events in the village, his family and his profession.
