Description

San Giovanni della Sala is produced by Antinori on the land adjacent to the Castello della Sala, an ancient medieval castle built in 1350 by supporters who came to Italy with Charlemagne with the aim of conquering Orvieto. Given the area's high vocation for the production of white wines, the Antinori family decided in 1940 to purchase the castle, which had been neglected for decades, and restore it to its former magnificence. On the 170 hectares of land, only white grape varieties are grown, with the sole exception of Pinot Noir, both native and non-native, to be able to express with each wine a modern vision of an ancient terroir. The winery has a modern concept of winemaking and was designed to guarantee quality and freshness in the wines produced, without however damaging the historic cellar already in place. present since the 16th century in the cellars of the fortress.

Antinori San Giovanni della Sala is born from a blend of native grapes, Grechetto and Procanico, with Pinot Bianco and Viognier to produce an Orvieto Classico DOC that expresses a new and unique style. The four vines, grown in a predominantly clayey soil rich in fossil shells, are harvested throughout the month of September. Part of the must is cold macerated in contact with the skins for about 6 hours at around 10°C while the remaining part is pressed. To enhance the characteristics of each variety, the vinification takes place separately in stainless steel tanks at 16°C. The wine is then aged on its own lees for several months to improve its structure and elegance before being blended and bottled. San Giovanni della Sala has been produced since 1990 and is recognized for its intensity, freshness, and fruity explosion on the palate.

Castello della Sala is located in Umbria, a short distance from the Tuscan border, about 18 kilometers from the historic city of Orvieto. Castello della Sala, a magnificent medieval manor with 600 hectares (1482 acres) of land 229 (566 acres) of which are planted with vineyards, is located halfway between the Paglia river and the summit of Monte Nibbio.

The estate’s 229 hectares (566 acres) of vineyards are located at an altitude of 220 - 470 meters above sea level (722-1542 feet) and are planted with traditional varieties such as Procanico and Grechetto but also with Chardonnay, Sauvignon Blanc, Sèmillon, Pinot Blanc, Viognier and a small quantity of Traminer and Riesling.

The region is exceptional for producing white varieties with one exception, Pinot Noir, that has found ideal conditions in this terroir to best express its full potential. The vines grow in clay and calcareous based soils, rich in fossil shells, and they are well exposed to the rising of the sun with an excellent difference of temperature between day and night.

Wine making On arrival at the winery, the grapes were vinified separately by variety to enhance the characteristics of each varietal. Part of the must underwent cold maceration, remaining in contact with its skins for about 6 hours at a temperature of 10 °C, before being united with that obtained from the soft direct pressing of the grapes. The must thus obtained was transferred to stainless steel tanks where alcoholic fermentation took place at a controlled temperature of 16 °C.
