Description
A still red wine from Lazio IGT, 14.5% ABV, produced by Casale del Giglio. Blend: 85% Syrah, 15% Petit Verdot, 2019 vintage. A wine that embodies the excellence of the Agro Pontino, a unique terroir influenced by the Tyrrhenian Sea. Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli. The grapes are harvested when perfectly ripe, sometimes slightly raisined for the Syrah. The vinification process involves different techniques for the two varietals. The Syrah ferments with indigenous yeasts using the submerged cap technique for 18–20 days. For the Petit Verdot, however, the vinification process uses punch-down fermenters to maximize the extraction of tannins and polyphenolic compounds. Aged in new barriques for 22–24 months, followed by a further 10–12 months of bottle aging. Balsamic notes stand out on the nose, followed by dark coffee beans, violets, and ripe morello cherries. Finally, a strong spiciness of coriander, nutmeg, and cinnamon emerges. A deep, dense ruby color. A fruity and persistent finish.

The wine cultivation models that have inspired this research are those practiced in Bordeaux, Australia and California, which are territories exposed to the influence of the coast, exactly as the Pontine Marshes, which benefits from the influence of the Tyrrhenian Sea. | Wine making | Vinification involves different techniques for the two varieties. Syrah ferments with indigenous yeasts according to the submerged cap technique for a period of 18-20 days, during which periodic "délestage" takes place, especially in the early stages. The Syrah thus gives Mater Matuta complexity and character, with sweet tannins and intense aromas of morello cherry and spices. For the Petit Verdot, on the other hand, vinification is carried out by means of fullers that allow maximum extraction of tannins and polyphenolic substances. The result is a Petit Verdot with great body and structure that lends itself well to long ageing. |
