Harvest | Grape selection and harvesting are made by hand during the last two weeks of September to encourage perfect grape ripening. |
Wine making | Before ageing, the Valpolicella is macerated on the marcs of freshly drawn Amarone and left to rest for about 15-20 days. |
Aging | It then matures in 500 000 litre oak casks for 18 months, followed by bottle refinement until it reaches optimum maturity. |
