Description
Dolcetto d'Alba Barturot is the DOC par excellence of the Piedmontese winery Ca' Viola, produced since 1991 in Montelupo Albese, a small village located in the Langhe, in the province of Cuneo. Here, in those years, a young Beppe Caviola, at the beginning of his career, decided to rent a 2-hectare plot of land and begin cultivating Dolcetto, a red grape variety widespread in Piedmont, especially in the Langhe area, appreciated for the low acidity of its grapes. The geographical location chosen by Caviola is particularly favorable for his purpose: it is located on clayey limestone soil at 500 meters above sea level, where it enjoys a temperate climate characterized by harsh winters and fairly cool, breezy summers. The vines used to produce Dolcetto d'Alba Barturot Ca' Viola are over 70 years old and are trained using the Guyot system using exclusively natural methods (manure, green manure, copper, and sulfur). Fermentation takes place in temperature-controlled tanks for 15 days, without the use of selected yeasts. Ageing takes place for 14 months in large barrels and an average of 8 months in the bottle to achieve the best results. However, it can easily be left to age in the cellar for over 5 years. From the first bottles, it was clear that Dolcetto d'Alba Barturot would become the symbol of the Ca' Viola winery.
