Aging On racking, the still warm wines are racked into small oak barrels, 60% new, made from selected woods, and matured for at least 3 years. After malolactic fermentation, in the middle of winter, the different batches are racked and blended. Thus the 'Maurizio Zanella' wine is born, which continues its ageing in wood for about 17 months. Afterwards, the different batches are assembled and the wine is bottled by gravity naturally. Thanks to innovative filling systems, the wine is not subjected to oxidative shocks, whisking and further additions of sulphites. Therefore, its integrity and wholesomeness are guaranteed.

Description

This is the first wine to bear the signature of its author, Maurizio Zanella, on the label, proudly celebrating the passion of the man who founded Ca' del Bosco. A wine that encapsulates the perfect synthesis between the territory and its way of being. A great wine that is undoubtedly among the jewels that have contributed to the 'Italian oenological renaissance'. Cabernet Sauvignon, Merlot and Cabernet Franc, selected from the company's best vineyards, skilfully vinified and aged in small oak barrels, guaranteeing a robust and powerful wine with harmony, capable of ageing for decades.

Origin 2 Cabernet Sauvignon vines, with an average age of 27 years, in the town of Erbusco. 1 Merlot vineyard, with an average age of 25 years, in the town of Cazzago San Martino. 1 vineyard of Cabernet Franc, with an average age of 24 years, in the town of Passirano. All the vineyards are in the Franciacorta Area, province of Brescia
Yield per hectare 9,300 kilograms of grapes, equivalent to 5,400 litres of wine (wine yield: 58%).
Wine making The 'Maurizio Zanella' is obtained by vinifying Cabernet Sauvignon, Merlot and Cabernet Franc grapes separately from the best Ca' del Bosco vineyards. The grapes, harvested by hand in small crates, are promptly graded and cooled. Expert eyes and hands select each bunch before being transported over the maceration vat. With destemming, the grapes fall into the vat, from above, by gravity. This avoids using traditional pumping systems, which would bring unwanted herbaceous notes. In the 2009 vintage, alcoholic fermentation and maceration were carried out for 22 days, carefully managing temperature and punching-down. Pump-overs were carried out daily, using a pair of elevating tanks into which the wine, tapped from the bottom of the vat, is transferred by gravity. Finally, the wine is poured by gravity into the vat, at high flow rate, to submerge the 'cap'. Nothing could be more natural and effective for gently extracting the colour and tannins.
