Description

Sebino IGT still red wine, 13.5% ABV, produced by Ca' del Bosco. 100% Merlot, 2015 vintage. A Merlot that expresses the excellence of Franciacorta, with its elegance and complexity. The Ca' del Bosco winery was founded in the mid-1960s by Annamaria Clementi Zanella. Intense aromas of ripe red fruit, complexity and finesse intertwine and accompany the finest tannins. Splendid deep garnet color. A sensation of freshness prevails. On the palate, harmony predominates over power. It is a wine of flowing elegance with perfectly balanced tannins. Aged in small oak barrels, 65% new, for 10 months.

Ca' del Bosco is the mainstay of the Franciacorta terroir. The Ca' del Bosco wineries were founded in the mid-1960s by Annamaria Clementi Zanella, who bought a modest house of the same name in Erbusco, which was endowed with vineyards and woods. However, her son, Maurizio Zanella, started wine production, enhancing the terroir's characteristics and transforming that small house into one of Italy's most productive wineries. In fact, these cellars are distinguished for producing the famousCa' del Bosco sparkling wine, which is characterised by its elegant yet strong personality given by intense, juicy aromas and fullness of flavour. Today Ca' del Bosco is a well-established business, producing numerous labels, including still wines, both red and white, and Franciacorta for which Xtrawine has reserved a place of honour. Harvest 11 October with meticulous bunch selection in the vineyard.
Fermentation temperature 21° C to 20° C.
Fermentation 11 days.
Wine making The harvested grapes were sorted by hand, destemmed, crushed and sent to the winemaker by gravity. Alcoholic fermentation lasted 11 days, driving the temperature from an initial 21ºC to 30ºC at the end of fermentation. After alcoholic fermentation, the temperature was maintained at around 28/30ºC throughout the post-fermentation maceration period. The entire process lasted a total of 25 days. Upon racking, the still-warm wine was racked into small oak casks, 65% new, where malolactic fermentation took place and it matured for a period of 10 months.
