Description
Extra Brut Classic Method sparkling wine, produced by Buvoli - L'Opificio del Pinot Nero. VSQ. A Classic Method Blanc de Noirs, made from Pinot Noir grapes, with a vinification process that includes aging in wood using the Perpétuelle method. On the nose, an intense impact of orange blossom and dried aromatic herbs is followed by notes of slightly oxidized Rennet apple, candied orange, and citrus zest. The finish reveals smoky notes of burnt straw over chalky minerality. On the palate, this wine is explosive in its nuanced balance between freshness and savory flavors.

| Production technique | At the prise de mousse, I did not want to filter or clarify the wines; the liqueur was also unfiltered, so as to retain the sensation of my perpetual cuvée. So expect a colour that veers towards amber tones and a sip underpinned by an engaging acidity. |
| Wine making | In steel and wooden vats, temperature-controlled. |
| Aging | In wood on fine lees using the perpétuelle method. |
| Allergens | Contains sulphites |
