Description
The TrentoDoc Pas Dosé Metodo Classico Riserva is produced in the Balter winery, a story of passion for wine and the prestigious art of winemaking. The story begins in 1872 when Francesco Balter purchased a 16th-century Castelliere north of Rovereto to manage it together with his brother Attilio to redevelop a medieval structure built for military purposes. Unfortunately, the two world wars interrupted agricultural activities and the structure became a carpet and flooring retailer. However, the Balter family's love and winemaking origins have remained led, once the land was reclaimed, to a winemaking revival in 1965.
The TrentoDoc Pas Dosé Metodo Classico Riserva Millesimato is the result of the commitment and craftsmanship that the Balter family places on the land as a starting point and on the winemaking, which aims to reflect the viticulture in the final product. It is produced only in the best years with grapes from the pergola-trained Chardonnay vineyards, which represents 80%, and Pinot Nero which concludes and gives it complexity. The first fermentation takes place mostly in steel vats, while 15% in barriques and ends between June and July. The blending with the Pinot Noir takes place shortly before tirage so as to best develop the peculiarities of each grape. In the bottle, the wine ages on the lees for at least 60 months, well beyond the minimum requirement of the Trentodoc regulations, testifying to the quality of the work done.
