Aging The new wine is left on its “fine lees” for a month, then cleared and racked in pressurized vats, where bubbles form. Secondary fermentation takes place at 16°C-18°C and selected yeasts again. The process lasts approximately 25-30 days, followed by a few days of ageing on the lees. The wine is then bottled and left to age in the bottle for a few weeks.

Description

Always attentive to gastronomic trends and consumer tastes, Astoria Wines looks to Japan and the cuisine of the Rising Sun for this Brut sparkling wine, designed for lovers of sushi and raw fish. At a time when the oriental and Japanese culinary tradition in particular is expanding more and more, this Brut cuvée can be paired not only with sushi but also with seafood crudités, with typical Japanese colours. The brut dosage of the sparkling wine in the bottle emphasises its distinctive characteristics of pear, citrus and wisteria flowers. Its dry and pleasantly acidic taste makes it an ideal companion for sushi, sashimi and raw seafood.
