Description

Antinori Tomaresca Castel del Monte Pietrabianca is a wine produced in Bocca di Lupo, on an Apulian estate founded and managed by the Antinori family. The name derives from the white stone, a building material found in large quantities in Puglia. The wine is made from native Apulian vines: Chardonnay and Fiano grapes, a small portion, fermented in wood and steel, respectively. Antinori Tomaresca Castel del Monte Pietrabianca is a Chardonnay obtained from the soft pressing of the grapes, which are then left to rest in stainless steel tanks at 10°C. The Chardonnay is then placed in oak barriques, where it ferments at a controlled temperature, finishing the process on the lees. The Fiano, on the other hand, undergoes fermentation in stainless steel, at 16°C, to enhance its acidity. The wine finishes its aging in the bottle for a period of 5 months. The contrast between the two different maturations makes the wine perfectly balanced, as it is a combination of the full flavor of the wood and the freshness of the grapes vinified in steel. The flavor is fresh, with citrus and tart fruit, accompanied by the savory richness of the oak barrel aging. The wine, with its delicate contrast, is perfect for pairing with white meat dishes, fish, and light main courses: it will allow you to savor the food with freshness and authenticity, given the balanced acidity of this product.

Origin The grapes are the best selection of Aglianico that grows in the estate of Minervino Murge (BA)
Harvest The variety is harvested at its optimal level of ripeninig.
Wine making The grapes are pressed softly and the must that is obtained is put in Inox tanks at a temperature of 10°C, so as to achieve a natural decantation. Afterwards the must is poured in new barriques of French and Hungarian oak, where the alcoholic fermentation takes place. After 5 months in barriques, where the malolactic fermentation takes place, the wine is poured into Inox tanks before being bottled.
