Forward-looking company with eighty years of history, founded in 1934, the "Agricole Vallone," is a symbol of the realities of the agricultural and productive fabric of Salento. An entrepreneurial family history, conducted today by the sisters Vittoria and Maria Teresa Vallone that, thanks to the long link with the agronomist Donato Lazzari, for years the technical direction of the company and the decades-long collaboration with Saverino Garofano (historical figure oenology southern Italy), was known for its rigor and production reliability and quality of wines and bottled oils. Story The name of the wine comes from the \"Graticciaia\", the fruit cellar where the light mats made of woven reeds and wicker are placed.
Climate Exposure: North - South.
Soil composition Calcareous - clayey.
Cultivation system Alberello
Harvest Careful selection of Negroamaro clusters from old vines bred as alberello. The grapes are first brought to maturity, then left to dry on racks.
Wine making When the drying is complete, the grapes are processed into wine. The physiological processes that take place in the grapes and the fermentation of the must in late autumn, when the ambient temperature is lower, lead to an evolution that is completely different from traditional vinification. The temperature of the must is strictly regulated throughout the slow fermentation process and the first stage of maturation is carried out in small wooden barrels.
