Operating as a ‘working museum’, Romano Levi captures the essence of these regional vines. How it is produced

Production begins with pomace matured in subterranean pits to develop profound aromas. Distillation occurs in a discontinuous copper still heated over a direct fire, followed by fractional distillation through a seven-plate column. The spirit then undergoes a five-year maturation in classic Piedmontese ash-wood casks, stored under controlled humidity and at a constant temperature. Because ash wood does not impart colour, the spirit retains its flawless clarity. This meticulous artisanal distillation and ageing process directly shapes its characterful palate and long, warming finish.

History and Heritage

Originating from the living museum in Neive, in the heart of the Langhe, this spirit captures the historic essence of the Distilleria Romano Levi. The celebrated ‘Wild Woman’ series features artisanal, hand-sketched labels that transform each bottle into a prized collector’s piece. Honouring a timeless rhythm of craftsmanship, this artisanal grappa is meticulously produced using an authentic direct-fire copper still and a seven-plate column. This rigorous distillation takes place only after the local pomace has matured in subterranean pits, ensuring a profound aromatic depth.

From this winery
The distillery was built by Serafino Levi and was fitted, then as now, with a direct-fire still, as we are told during one of the rare interviews with his son Romano in 1991:

"… in those days there were so many of them … usually distilleries operated with direct-fire stills. A Malba device, because I always heard the name Malba being mentioned, then I saw that at the Bocchino distillery, which has a room with the stills in sight, there was Malba Giovanni Ricostruzioni Meccaniche Asti or Malba Fratelli (Malba Brothers) or something like that, and ours should be a Malba appliance... for me, who now I think I can say I know it quite well if not very well, because I've been distilling for 46 years, it's a device that goes very well, it's a little gem, a toy, that if you give it what you want, what you need, if you don't push it, if you adapt to it, it works wonders...
… I think that this Giovanni Malba was a distiller because they made this device very well; as well as designing it, if they designed it, they have made it very well".

The Levi house-distillery is now a living, Grappa production museum, a real time capsule, where the Genius Loci of Romano Levi, hovers everywhere in art, in the method and time of work, in the simple and basic objects, scents and serenity. The distillery is always open to everyone, it’s a bit more difficult is to find some bottles ready for sale, as the very low production capacity cannot meet the demand that comes from all over the world, but connoisseurs are aware of this, they enjoy the serenity of the place, don’t get angry and wait or patiently try again.
