Geographical origin
The raw material originates from the Colli Euganei in the Veneto region of Italy, an area perfectly suited for cultivating aromatic grape varieties. In this environment, the Moscato grapes develop a naturally high concentration of aromatic compounds, directly influencing the final vibrant profile. The name of the spirit reflects the remarkably small distillation yields obtained during its early production, when the collected quantity was simply described as ‘a little’ (po’ di).
How it is produced
This spirit is created through precise artisanal distillation in small batches, utilising select pomace chosen for its high aromatic potential. The process relies on a discontinuous bain-marie still, a gentle heating method specifically designed to capture and retain the volatile compounds of the grapes. History and Heritage
Introduced in 1995, this Moscato grappa challenged tradition by elevating aromatic pomace from the Euganean Hills. Originally, the artisanal distillation in a bain-marie still yielded such small quantities that the distillers referred to the volume as just “a little”, inspiring the now-famous Po’ di Poli name.
