How it is produced
The winemaking process aims to preserve the integrity of the fruit. The must undergoes malolactic fermentation in tanks and, to protect the delicate aromatic nuances, is neither cold stabilised nor filtered. The secondary fermentation takes place according to the principles of the Traditional Method, with maturation on the lees for over fifteen months. The addition of a dosage liqueur free from preservatives defines the Brut dosage, delivering a pure, crisp and extraordinarily dynamic tasting experience.
