What kind of wine it is
Valpolicella Classico Superiore by Domini Veneti is an elegant still red wine. This blend of Corvina, Corvinone, Rondinella and Molinara displays a ruby red colour and intense aromas of cherry and plum, enriched by floral notes of violet and hints of vanilla and black pepper. On the palate, it is fresh and fruity, supported by a velvety tannic structure that perfectly balances body and natural acidity. Its persistence makes it ideal for pairing with ragù-based pasta dishes, roast meats, grilled dishes and medium-aged cheeses.
Where it comes from
It originates in the heart of the Valpolicella Classica, on the hills of the municipality of Negrar. The vineyards are situated between 250 and 450 metres above sea level, with optimal south-east and south-west exposure. The soils are varied, predominantly clay-loam with calcareous inclusions and volcanic components that enhance the expressiveness of the grapes. The vines are trained using the double pergola system, with low yields to encourage optimal ripening. These conditions ensure the wine has a solid structural balance and preserves the aromatic freshness typical of the Veneto region.
How it is produced
The process begins with a rigorous manual harvest carried out between September and early October. After destemming and crushing, fermentation takes place at a controlled temperature. The ten-day maceration involves punch-downs and scheduled pump-overs, essential for extracting colour and phenolic compounds. This is followed by malolactic fermentation, which softens the wine's profile. Production concludes with natural stabilisation and maturation in wooden barrels and steel tanks, a technical choice aimed at preserving the integrity and freshness of the fruit.
