From this winery
The production of Premium Sake by Akashi-Tai Brewery began in 1918 in the heart of the town of Akashi, known at the time as a small fishing village. Over the years, the company has never stopped growing, investing and modernising, until today, when it can be considered one of the largest producers of Sake in terms of quality. The raw materials, all strictly local, are of fundamental importance: from Nihon Baré rice to the famous Yamada-Nishiki, nothing here is left to chance and everything goes back to the territory and the long tradition of this land.
