| Wine making | The grapes, immediately destemmed, are left to macerate cold for a day in order to further refine their fruity bouquet. The wine then ferments for about 10 days at a constant temperature of 28 - 30 °C. At regular intervals, through racking and light crushing, the must comes into contact with the skins. This results in optimum absorption of the colour pigments from the skins while enhancing the wine's fruity aroma. After two careful rackings, the wine undergoes a slow maturation process that takes place in various stages in wooden barrels. |
| Aging | The wine first stays twelve months in barriques, then, after blending, a further six months in large oak barrels before undergoing a further six months of bottle ageing: only at this point does the Lagrein Riserva go on sale. Although our Lagrein Riserva is at this point a wine that is already balanced and ready to drink, it can acquire more fullness by remaining in the cellar for many years. |
