Where it comes from
This red originates in Piedmont, from the historic Scarrone vineyard located in Castiglione Falletto. The grapes come from over a century-old vines, with historic stocks planted over a hundred years ago. Exposed to the south-east, these old plants guarantee limited yields, promoting superior quality and remarkable concentration in the bunch. The agronomic management follows the principles of sustainability and is in the process of conversion to organic farming. Every intervention in the vineyard respects the bond with the land, ensuring an intense and complex fruit.
How it is produced
The process begins with a cold pre-fermentation maceration to extract colours and primary aromas. Alcoholic fermentation lasts for about two weeks in steel vats, with punching down and pumping over to maximise contact with the skins. Subsequently, the wine undergoes malolactic fermentation in barrels for four months, gaining greater roundness. The eighteen-month ageing continues between steel and barrels, a fundamental step to integrate the structure and give the sip a pleasant velvety sensation.
