What kind of wine it is

The Tristan Hyest Champagne Bord de Marne Extra Brut Magnum is a blend combining Pinot Meunier, Chardonnay and Pinot Noir. Produced using the Traditional Method, it displays a straw yellow colour with a fine perlage. The nose reveals floral notes, fruity aromas and hints of pastry. On the palate, it shows a medium body and pronounced freshness, making it easy to drink. The Extra Brut dosage ensures a precise and clean tasting experience, perfect when paired with shellfish, fish and starters.

Where it comes from

This wine originates from the Bord de Marne region, near Trélou-sur-Marne. The area imparts a natural finesse to the grapes, enhanced in the vineyard by careful sustainable viticulture. Respect for the environment translates into a clean wine with great structural balance. Served at a temperature between 6 and 8°C, the Champagne expresses its full potential, revealing a captivating harmony with cheeses and a clear aptitude for ageing.

How it is produced

Production is based on the Traditional Method, with a long period of ageing on the lees. Its distinctive feature lies in the use of the Solera method in partially filled barrels, a process that enriches the base wine, providing continuity and depth. This technique defines the aromatic complexity, balancing the acidic tension with the rounded structure of reserve wines. The final result boasts remarkable ageing potential, ideal for cellaring over several years.

History and Curiosities

Originating from Trélou-sur-Marne, the Champagne Bord de Marne Extra Brut in Magnum format represents a masterful expression of sustainable viticulture. This fine cuvée stands out for its use of the Solera method at 40% in partially filled barrels, a fascinating technique that enriches and gives continuity to the reserve wines. The elegant blend of Pinot Meunier, Chardonnay and Pinot Noir offers a fresh and balanced sip, enhanced by refined pastry notes. A true masterpiece, capable of evolving magnificently in the cellar for up to ten years.

From this winery
The values that have been passed me are thanks to my father, who decided to learn the work of the vine and wine, I received all these in addition to my champagne heritage.

In 1999 I decided to acquire solid experience.

In 2001, I personally took over the vines and obtained replanting rights. Then, in 2003, with a small holding of 2.5 ha, I decided to get into the development of my own vintages, creating a champagne with a unique style...
