Sassicaia Olio Extra Vergine d’Oliva by Tenuta San Guido reveals an intense, fruity profile with a clean, harmonious taste. This Tuscan oil offers a balanced, rounded mouthfeel and an inherent freshness. Structured to elevate raw ingredients without masking them, it is ideal for finishing dishes. Where it comes from

Originating from Bolgheri in Tuscany, the olive groves are situated between 100 and 300 metres above sea level. An optimal west and south-west exposure ensures steady ripening, which actively shapes the character of the fruit. Cultivated by Tenuta San Guido, these trees thrive in calcareous soils rich in marl. This specific terrain, interspersed with stones, pebbles, and clay, grants the oil its notable structure and precise definition.

How it is produced

The production process begins with hand harvesting, which takes place from early September until the first week of October. Picking starts with the youngest trees before progressing to the lower groves. Following a careful selection to ensure only the healthiest fruit is pressed, a precise cold extraction is applied. This method is essential for preserving the natural freshness and clear aromatic profile of the olives. The result is a refined oil with a consistent balance, perfect for seasoning dishes at the table.
