| Wine making | Fermentation with temperature-controlled maceration in stainless steel tanks. Soft de-stemming and roller crushing after careful grape selection in the vineyard and on the sorting belt in the cellar. Maceration time on skins: 6 to 9 days depending on vintage, fermentation temperatures between 23 and 26 °C to extract colour and aroma. |
