Selosse Pajon Champagne Fut de Chene Elegance Brut is an organic wine born from a harmonious blend where Chardonnay meets Pinot Noir and Pinot Meunier. Produced according to the Traditional Method, it offers an expressive bouquet on the nose, dominated by pastry notes, fresh vanilla and syrupy nectarines, with subtle woody hints. On the palate, the initial impact is generous, leading to a full-bodied sip that fades into a long finish with a slight bitter vein. Its elegance makes it perfect to pair with shellfish, sushi, fried fish and cheeses.

Where it comes from

This wine originates from France, capturing the authentic spirit of Champagne through the vineyards of Chavot in Épernay and Damery in the Vallée de la Marne. The cuvée, signed Selosse Pajon and the result of Jérôme Selosse's vision, enhances the interaction between the grape varieties and the unique characteristics of the local soils. This territorial expression gives the glass a defined personality and remarkable ageing potential, ensuring an interesting structural evolution over five or ten years.

How it is produced

The production process strictly follows the Traditional Method, with ageing in oak barrels for eight or nine months after the initial vinification. This winemaking practice gives the wine depth and roundness, harmonising the freshness of the fruit with elegant spicy nuances. To fully enjoy its brightness and rich aromatic bouquet, the ideal serving temperature is between 6 and 8°C.

The domaine Selosse Pajon is managed by Jerome Selosse and his wife, Corinne Selosse Pajon.

Jerome is the great-grandson of Jacques Selosse, father of Anselme Selosse. At the beginning of his career, Jerome worked with Anselme Selosse for 2 years, from 90 to 92.

Having inherited the vineyards from his common great-grandfather, Mariuss Selosse, many of Jerome's Avize vineyards are next to those of Anselme.
