Wine making | The harvested grapes are destemmed, crushed for 4-5 days and macerated at a temperature of 15°C. Fermentation takes place at 20°C for about 3 weeks, followed by malolactic fermentation, which is completed by Autumn. |
Aging | Towards the end of the Winter, the wine undergoes its initial 18-month ageing in Bordeaux 'carats' of tronçais oak, and is then placed in traditional barrels of larger capacity for a further 12 months. After bottling, there is a final period of ageing in dark cellars at a temperature of 16°C for at least 18 months. |
