Savart's Le Mont Benoit Champagne is a rigorous Traditional Method wine that combines the expressiveness of Pinot Noir and the elegance of Chardonnay. In the glass, it presents with a golden straw-yellow colour, enlivened by a fine and persistent perlage that anticipates a crisp olfactory profile. Precise hints of red fruits, green apple and almond emerge on the nose, intertwined with deep mineral notes. On the palate, this Extra Brut is dry and savoury, supported by a vibrant gustatory tension that makes it ideal for accompanying starters, fish dishes, shellfish and cheese selections.

Where it comes from

This wine originates in the Villers-aux-Nœuds Premier Cru, within the Champagne region. The vines, which are over forty years old, are rooted in the clay-limestone soil of the historic Le Mont Benoit plot. This specific geological composition gives the wine a clear and deep mineral imprint. Savart follows an approach that respects the natural balance, prioritising sustainable management. Thanks to this care, the old vines manage to convey the authenticity of the terroir, ensuring a dry and strongly distinctive taste profile.

How it is produced

Production relies on the long lead times of the Traditional Method, with an approach aimed at preserving the purity of the fruit. After vinification, the secondary fermentation allows for long ageing on the lees, which is fundamental for defining the depth of the drinking experience. The final blend, characterised by a minimal dosage that defines a dry and taut style, expresses a marked propensity for evolution over time. Indeed, this cuvée boasts a remarkable ageing potential, estimated at between fifteen and twenty-five years, revealing an increasing aromatic complexity over time.
