Description
Extra brut classic method sparkling rosé, produced by Revi, Trentodoc Cavaliere Nero Rosè Riserva 2017, 12.5% vol. A Trentino Alto Adige excellence, celebrating the elegance of Pinot Noir. The grapes are harvested in mid-September and carefully vinified to preserve their freshness and aroma. After gentle pressing, the must is separated from the stems and pomace and clarified before fermenting. The fermentation temperature is regulated by refrigeration. Aged on the lees for 72 months. Fine and persistent perlage. A light toasted aroma, reminiscent of freshly baked bread crust, yeast, and berries such as strawberries, currants, raspberries, blueberries, and finally cherries. A distinctive floral aroma reminiscent of nigritella, with an aroma that fades into notes of chocolate and vanilla, creating a fragrant and complex blend. Dusty pink in color. It is ample and succulent on the palate, medium dry, with a fruity edge that recalls the aromatic palette described on the nose. Excellent harmony and persistence, with a lovely salty, mineral edge and fresh acidity. The bubble is nicely crisp, with an interesting tension.
