The artisanal distillation process uses steam-heated copper stills to extract intense yet balanced aromatics. With a 40% alcohol content, it presents a lightly tannic backbone, gaining depth and roundness from time spent in oak and Pedro Ximénez Sherry casks.

Hailing from Schiavon in northern Italy, this Grappa is produced by Poli, a historic family distillery. The local pomace reflects the red and white varieties cultivated across the Veneto region, combining Merlot and Cabernet Sauvignon with Glera and Prosecco. This careful selection of raw materials defines a profile built on concentrated grape aromatics and a remarkably clean distillation. The regional heritage is expressed through an approach focused on technical precision and consistent maturation, delivering a harmonious spirit with a highly expressive character.
How it is produced
Poli Due Barili is produced by artisanally distilling select grape pomace in steam-heated copper stills. Following distillation, the spirit undergoes a four-year double maturation sequence, resting for two years in French oak barriques before spending a further two years in Pedro Ximénez Sherry casks. This precise ageing method adds structure and softness, introducing inviting notes of milk chocolate and raisin alongside toasted hazelnut, vanilla, and sweet spice. The palate remains distinctly velvety, revealing rich caramel and dark chocolate flavours. A long, persistent finish is framed by a light tannic edge that perfectly supports the overall balance of the spirit.
