Brut Champagne made using the classic method, produced by Pol Roger, a historic name in Champagne. 2015 vintage, 0.75L bottle. A tribute to Sir Winston Churchill, a wine that embodies elegance and complexity. The nose is dominated by notes of dried fruit, toasted almonds, and honey, a bouquet that evolves over time. Vinification involves two decantings of the must and cold fermentation. Secondary fermentation in the bottle at 9°C in Pol Roger's cellars. Fine and persistent perlage. The color is golden yellow. On the palate, it is full-bodied and powerful, yet balanced with a fresh citrus acidity. It is very long, with creamy notes of butter, plum, and ripe pear. Ideal for celebrating special occasions, it pairs perfectly with oysters, fish, and creamy dishes.

| Wine making | The must undergoes two decantations, one immediately after the first pressing and a second in stainless steel tanks at 6°C for 24 hours. A slow cold fermentation follows this in stainless steel at a constant temperature below 18°C. Vinification takes place separately by grape variety. The wine undergoes full malolactic fermentation and is then blended. Pressing takes place in the bottle at 9°C in Pol Roger's underground cellars at 33 metres below street level, where the wine is kept until it undergoes riddling by hand, a rarity in Champagne production nowadays. |
