Closely linked to the place where it is located, the Cantina Planeta offers a series of labels of great territorial adherence, truly unique: La Baronia in Capo Milazzo, Dispensa in Menfi, Buonivini at Noto, Feudo di Mezzo on the Mount Etna in Castiglione di Sicilia and Ulmo in Sambuca di Sicilia. These are the places where the Cantine Planeta wineries are located, whose history has been handed down since the XVI century, by no less than 17 generations. Harvest Refrigeration in the cellar for 12 6 hours; sorting on table with 11% rejection; whole grapes sent by belt directly to press.
Wine making 80 quintal pneumatic press, maceration in the press for 3-4 hours at about 1°C with a must yield of 54%. Static settling at 10°C for 48 hours. Only the clear must is racked and inoculation with s. cerevisiae yeast. The wine is transferred to barriques after the start of fermentation at 15°C. Fermentation for 8 days in barriques at 18-20°C. Malolactic fermentation is almost fully carried out.
