Nuits Saint Georges AOC still red, 13% ABV, produced by Philippe Pacalet. 100% Pinot Noir. 0.75 L bottle, 2023 vintage. A wine born from the passion of Philippe Pacalet, a winemaker who is one of the young people who began making wine in Burgundy. East-facing, cool and sunny microclimate. This wine is composed of 60% "Les Longecourts" climate and 40% "Bas de Combes" climate on the edge of the Vosne-Romanée AOC. Clay and limestone; on the surface a layer of pebbles and clay on limestone rock. Made from whole grapes, selected without SO2, with double punching for 4 weeks. Alcoholic fermentation with indigenous yeasts without artificial temperature control. Aged on the lees, "reduction" training without racking, with riddling without SO2 for 16 months. A wine that best expresses the characteristics of the Burgundian terroir, a wine that promises to delight the most demanding palates.
