Description
What kind of spirit is this?
Très Rare Cognac by Paul Giraud is an elegant grape-based spirit from the Grande Champagne region, a renowned Premier Cru. This spirit displays a deep amber colour, opening with a bouquet of pepper, clove, fine woods, and distinct hints of prune. On the palate, it delivers a very rounded mouthfeel, developing rich nuances of leather, tobacco, and cigar box. As the tasting progresses, it reveals the characteristic rancio aroma, leading to a smooth, impeccably integrated finish.
Geographical origin
This spirit originates from the village of Bouteville, located in the heart of the Grande Champagne region in France. This area is highly regarded for producing eaux-de-vie with the ideal structure for extensive maturation, justifying its prestigious Premier Cru classification. Crafted by Paul Giraud, a ninth-generation producer, the spirit reflects a profound understanding of the local terroir. The specific climate and soil foster the development of a deeply layered profile, ensuring that the defining notes of spice, fruit, and wood emerge with absolute clarity.
Production process
The production of this spirit relies on the long ageing of carefully selected eaux-de-vie, allowing them to rest until they reach complete maturity. This extended maturation integrates spicy elements with deeper aromas, ultimately developing the sought-after rancio character—often evoking the scent of old waxed furniture once the glass is empty.
History and Heritage
Crafted by the ninth-generation Paul Giraud estate in Bouteville, this Grande Champagne Premier Cru exemplifies traditional mastery. The meticulous, long-term ageing of selected eaux-de-vie yields a profoundly complex spirit that unfolds like a peacock’s tail on the palate. It also develops the sought-after rancio, a characteristic aroma of very old eaux-de-vie resembling the smell of waxed antique furniture.

Giraud is one of the last estates to maintain the manual harvest on a total area of 35 hectares, within a 1er Cru belonging to the area of Grande Champagne, and does not resort to any kind of synthetic chemistry. The natural springs that flow through the family cellars ensure the best conditions for ageing. All the cognacs produced are vintage since Giraud's production philosophy does not allow the blend of spirits from different vintages to highlight the genuine differences between one vintage and another.
