Description

Ancient white grape variety of uncertain origin, quite common in Puglia, specially in the hills of Valle d'Itria, where winds and sun exposure produce fresh and aromatic fruity and elegant wines.

Paolo Leo, born in 1960, was born into a family where producing wine was an inevitable legacy; in the early 20th century, the forefather began to vinify his grapes in the Monticello Masseria, then his son Paolo Leo inherited the land and built the palmento (the first stone building used to produce wine) in the village.

Today he is still an heir, the namesake Paolo Leo, son of Nicola, to lead the new winery, together with his wife Roberta and his eldest sons Nicola and Stefano, who are paving the way for the younger brothers Francesco and Alessandro.

Harvest Manual harvest, between late September and early October.
Wine making Bunches are left overnight at sub-zero temperature (20-hour cryomaceration). The grape then is destemmed and pressed; follows a short cold maceration and a subsequent soft pressing of the skins. Fermentation is carried out at low temperature to preserve aromas and freshness.
Aging 3 months in a stainless steel vessels and 12 months in the bottle.
