Sant’Agata by Paltrinieri is an organic sparkling red wine produced in Emilia-Romagna from Lambrusco di Sorbara grapes. In the glass, it displays a pale ruby red colour, a fine perlage and a creamy mousse. The aromatic profile opens with intense and elegant notes of wild berries, intertwined with the characteristic scent of violets. On the palate, it is dry and lively, driven by a refreshing acidity, a smooth body and a savoury finish enriched by a subtle herbal nuance.

Where it comes from

This wine originates in the province of Modena, within the historic area of Sorbara. The vines are cultivated in the Vigneto Cristo vineyard, located in a highly suitable area between the Secchia and Panaro rivers. The soils are loose, predominantly silty and sandy, providing a cool environment with a good presence of organic matter. The agricultural management follows the double curtain system to maintain balanced yields, enhancing the natural agility on the palate and the identity of Lambrusco di Sorbara.

How it is produced

The harvest takes place during the second week of September, followed by a gentle pressing of the bunches to extract the most delicate musts. The alcoholic fermentation is carefully managed to preserve the purity of the fruity aromas. The secondary fermentation required to develop the effervescence takes place using the Charmat, or Martinotti method, in stainless steel autoclaves. The wine possesses a solid balance and an ageing potential that allows it to rest and evolve elegantly for several years.
