Where it comes from
The grapes selected for Champagne l’Esquisse come exclusively from young plots located in the villages of Cuisles, Jonquery and Châtillon-sur-Marne. In these historic areas, Moussé Fils cultivates vineyards on soils dominated by green clays over a solid base of calcareous marl. This specific soil composition gives the Champagne pronounced acidity and remarkable gustatory tension, lending it a linear and dry character. The enhancement of Pinot Meunier finds in this particular calcareous-clay terroir the optimal conditions to express a vibrant fruity purity, reflecting the expertise handed down through four generations of winemakers.
How it is produced
Production begins with meticulous manual harvesting in small crates, essential for preserving the integrity of the bunches. After pressing, the must undergoes malolactic fermentation to harmonise the wine’s profile before the prise de mousse. This is followed by ageing for about 18 months on the lees, a carefully calibrated period to enrich the structure without weighing down the natural freshness of the raw material. Thanks to a very low dosage, the result is a clean, direct and vertical sip. Served at a temperature between 6 and 8°C, this wine is excellent with shellfish and lean fish, as well as delicate cheeses and refined aperitifs.
