Franciacorta Salvadek Extra Brut by Monte Rossa is a sparkling wine created from a blend that highlights Chardonnay alongside other varieties. Made strictly according to the Traditional Method, it stands out for its bright golden yellow colour and fine, persistent bubbles. The bouquet is intense and complex, characterised by notes of toasted almond and hazelnut, candied citrus, preserved peach, melon and subtle mineral hints. On the palate, it expresses a fresh, savoury and balanced character, finishing with a long aftertaste reminiscent of delicate pastry notes.
Where it comes from
This Franciacorta originates in Lombardy, in the area of Bornato. The vineyards rest on glacial moraine soil, a geological matrix that gives the wine its typical precision of flavour and a saline note consistent with the Extra Brut style. The vines are trained using the Royat cordon system to ensure excellent quality. Monte Rossa's approach involves meticulous artisan care at every stage, enhancing the expressiveness of the terroir through the separate vinification of each individual estate cru.
How it is produced
The production process begins with a gentle pressing of the grapes, aimed at extracting only the best fraction of the must. Fermentation takes place partly in temperature-controlled steel tanks and partly in oak barrels, which define the wine's structure while preserving its freshness. The secondary fermentation follows the strict Traditional Method, with ageing on the lees for over thirty months. This long maturation imparts complexity and impeccable balance, enhancing a clean finish enriched by elegant mineral sensations.

The history of Monte Rossa is starred by strategically winning decisions such as being first to abandon still wines to search for excellence in Franciacorta, or the determination to invest in technology, or again the continuous research and experimentation distinguishing this winery.
Today the Monte Rossa Company manages 70 hectars of vineyards. The different locations of cru on plots with different exposition contribute to increase the aromatic richness of grapes in such a way to make up very rich cuvée under the frame and complexity aspect.
