The Vineyards and Surface Area
The domaine tends old vines averaging around 40 years of age, situated across two of the most celebrated terroirs in the Montagne de Reims:

7.30 hectares in Ambonnay, spread across renowned crus including Les Saints Remys, Les Beurys, Les Crayères, La Grande Ruelle, Les Bermonts, and Le Parc
0.70 hectares in Bouzy, divided between the plots of Les Loges and Les Hannepés
Vineyard Philosophy
In the vineyards, every practice adheres to ecological and holistic principles certified Organic and Demeter:
Animal traction with horses: since 2010, soil tilling has been performed exclusively with horses to prevent tractor compaction, safeguard native flora, foster biodiversity, and maintain a direct connection with the chalk bedrock.
Phytotherapy and aromatherapy: vine care and protection rely on macerations, infusions, and decoctions of medicinal plants alongside targeted essential oils, completely avoiding synthetic chemicals.
Cellar Philosophy
In the cellar, winemaking respects the natural energy of the raw material without invasive intervention, utilizing gentle, natural methods:
Gravity-fed handling: musts and wines are moved by natural fall to minimize mechanical stress.
Aging and naturopathic care: special emphasis is placed on extended lees aging and mindful attention to the wine's energetic balance.
