| Harvest | November. Wine of overripe grapes are wines whose characteristics derive essentially from grapes that, after normal natural ripening, have been left to ripen further on the vine before being harvested and vinified. |
| Wine making | At the end of the drying process, the grapes decreased in weight by approximately 45-50%. At the end of November, the grapes are pressed and the resulting must is fermented for 40 days at a controlled temperature. |
