Where it comes from
The roots of this Crémant d’Alsace lie in the territory of Eguisheim, where the Gruss winery cultivates its vineyards using organic farming. The vines grow on limestone soils, nourished with natural compost and without the use of herbicides. This ecosystem is home to plants aged between twenty-eight and thirty-seven years, ideal for imparting a distinct mineral character to the wine. The result is a healthy raw material that translates into a clear profile, capable of reflecting the most authentic characteristics of the region.
How it is produced
Production begins with a manual harvest and gentle pressing, followed by cold settling. Fermentation takes place in stainless steel to preserve the aromas, while part of the base wines mature in old oak barrels. The secondary fermentation follows the Traditional Method, with ageing on the lees for twenty-four months. This waiting period gives the wine a complex and balanced texture, perfect for accompanying sophisticated aperitifs, shellfish dishes and delicate pastries with measured sweetness.

All the vineyards are organically cultivated. The company avoids using weedkillers and employs home-grown compost for fertiliser and grassing in alternating rows. The vineyards have a yield that varies from a minimum of 25 quintals per hectare, for the Grains Nobles selections, to 80 quintals for the grapes destined for sparkling wines. Harvesting is still done strictly by hand. For the rest, only 'common sense': traditional vinification in old oak barrels that were bought by great-grandfather Joseph. There are no hidden secrets for a production that reflects the terroir and grape varieties of Alsace, the result of an interpretation that is attentive to the terroir and faithful to tradition.
