Wine making | After crushing and destemming, maceration on the skins follows for 15 days, with pumping over and control of the fermentation temperature at 20-24 °C. The product remains in steel tanks until February and is then mulled over the spent Amarone pomace. Here a refermentation takes place that increases the wine's structure and aroma. |
Aging | After racking and cleaning, the product is transferred to barriques of various capacities. After a few months, it is blended and placed in the bottle to refine for a further 2-3 months. |
