Description
Classic method sparkling wine, 13% ABV, produced by Dorigati in Trentino Alto Adige. 0.75-liter bottle, 2019 vintage. A Trento DOC Riserva that celebrates the history of a family that has dedicated itself to viticulture for generations. Intense and complex, slightly spicy and with aromas of ripe fruit. Fine and persistent perlage. Straw yellow with golden reflections. Enveloping but not aggressive foam. Smooth and full-bodied with a long finish, thanks to good structure and balance.

| Aging | Preparation of the cuvée in the spring following the harvest. Bottling and slow fermentation at a temperature of 11°C. Maturation in the bottle for approximately five years, with periodic re-suspension of the yeasts. This is followed by the 'remuage' phase on 'pupitres'. At the end of this cycle, disgorgement is carried out with the addition of 'liqueur d'expedition'. The sparkling wine thus obtained matures for a further 6 to 8 months before being marketed. |
