Where does it come from
The grapes ripen in organically farmed vineyards located south of Saint Antonin and north of Jonquières. The vines, with an average age of forty years, sink their roots into clay and silt soils resting on a solid marl substrate. This geological formation encourages the development of concentrated fruit, ensuring a well-defined aromatic component. Cultivated by the Sabon family, the plots offer a faithful interpretation of the French terroir, imparting to the wine the distinctive richness of the Rhône Valley.
How is it produced
The process begins with meticulous manual harvesting and selection of the bunches. The fruit, partly destemmed and partly whole, undergoes maceration and fermentation for about two weeks, ideal for controlled extraction of colour and phenolic matter. Maturation continues for several months, making synergistic use of concrete vats and oak barrels. This technique shapes the structure of the wine, preserving the clarity of the fruit and elegantly enhancing the typical spicy character that distinguishes this refined label from Clos St Antonin.

Acquired in 2014 by the Sabon family, who already owned Domaine de la Janasse, the estate is located in the commune of Jonquières, at the highest point and on the edge of the Plan de Dieu appellation.
