Harvest | Hand-picked, very carefully sorted. Whole grapes vatted, no SO2 added. |
Wine making | Inerting with a little dry ice. After 5 days of intracellular fermentation, the first punching down triggered AF. It lasts about 10 days with a few punchings of the cap. Pressing is gentle (0.7 bar). The wine was placed in barrels, 6% of which were new, by gravity and without aeration. |
Aging | Aged on lees until bottling. Very slight addition of sulphites. Bottled with filtration. |
