Claire Naudin took the Domain Naudin Ferrand in 1994 to shape it to her own personality. She believes in sustainable winemaking, and refuses standardization to return to traditional methods. Her wines deeply rooted in Burgundian tradition carry all her sensitivity, and a promise of a better future, including carbon accounting. Harvest Hand-picked, very carefully sorted. Whole grapes vatted, no SO2 added.
Wine making Inerting with a little dry ice. After 5 days of intracellular fermentation, the first punching down triggered AF. It lasts about 10 days with a few punchings of the cap. Pressing is gentle (0.7 bar). The wine was placed in barrels, 6% of which were new, by gravity and without aeration.
Aging Aged on lees until bottling. Very slight addition of sulphites. Bottled with filtration.
