From this winery
The Cherubini farm is located beyond the borders of eastern Franciacorta, immersed in a natural park in the Brescia hills, a few kilometers from the city center. In this valley there is a terroir of millenary formation with underground aquifers and rocks rich in limestone with a clayey substrate.

These soil characteristics combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. Conventional agricultural tools such as weed killers or pesticides are not used.

The agricultural and winemaking philosophy is aimed at intervening as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods with Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin.

Wine making Pure Pinot Noir, the grapes are destemmed and left to macerate for about six hours. Racking into cement vats and spontaneous vinification in vats for about twenty days. At the end of fermentation, it is racked again into a cement vat where it rests until frothing.
Aging After ageing for a minimum of 48 months I proceed with disgorgement and use the same wine for topping up.
