Cesarini Sartori Montefalco Terrebianche Rosso is an Umbrian wine with a ruby colour and bright violet highlights. This blend of Cabernet Franc, Cabernet Sauvignon, Merlot and Sangiovese reveals notes of blackberry, morello cherry and cherry, intertwined with spicy hints of black pepper and vanilla. On the palate, it displays a harmonious structure, where savouriness and freshness balance perfectly integrated, velvety tannins. The sip finishes with a soft and rounded finish, ideal for pairing with mature cheeses, red meats and game.
Where it comes from
The grapes are grown in the Montefalco area, trained using the spur-pruned cordon method on clay, sandy and lacustrine soils. This particular geological composition gives the wine a pronounced structural definition. The work in the vineyard culminates in a meticulous manual harvest, followed by careful selection of the bunches. The use of vibrating sorting tables ensures that only the best raw material reaches the winery, guaranteeing the highest quality expression and a highly precise organoleptic profile.
How it is produced
Vinification begins with a pre-fermentation cold maceration, a technique aimed at gently extracting the primary aromas of the grapes. This is followed by fermentation at a controlled temperature and a settling phase in stainless steel. The subsequent malolactic fermentation in barrels softens the flavour profile, preparing the wine for the maturation period. A three-year ageing process between steel, barrels and glass allows all the components to merge into impeccable balance, offering the palate a long and satisfying persistence.

Their choice was not random: already in 1312 the urban land register certified the millennial viticultural vocation of the territory , accross the "road" (Signæ) of the ancient Flaminia, where – it is said – there was a host which served a "sweet an flavoured" wine to people travelling from Rome to North Europe.
The winery is surrounded by 30 hectares of vineyards – cultivated with Sagrantino, Sangiovese, Merlot and Cabernet vines – and by several medieval castles, still populated, which draw a unique landscape scenario.
If we were to tell Signæ with just three words we would choose technology, genius and sustainability. Thanks to technology we are able to minimize the use of chemicals both in the vineyards and in the cellar: the result are high quality natural wines, with a minimum quantity of sulphites which do not bother the head or the stomach. Alongside technology, it remains an important manual work: the harvest is manual, as the processing of the soil around the vines and the selection on vibrating tables, first of the bunches and then the berries.
