Description

Still red wine from Veneto, Corvina Veronese IGT, 13.5% ABV, produced by Gerardo Cesari. 0.75-liter bottle, 2016 vintage. A wine born from the passion of a historic winery, founded in 1936, which has perfectly interpreted the Valpolicella terroir. To enhance the characteristics of this wine, further bunch thinning was necessary during the veraison phase and advanced ripening was allowed until the end of October. The grapes were carefully harvested and placed in crates for 20 days of drying. Fermentation maceration lasted approximately 20 days. Aged in small French oak barrels for 18 months, followed by blending in barrels and further aging for an additional 6 months. It releases a bouquet of red fruits and macerated cherries with lightly toasted notes, along with hints of cocoa and coffee. Bright, purple-red color. On the palate it is soft, full and harmonious, with excellent length and persistence.

Harvest In order to exalt the characteristics of this product, it was necessary, during the veraison phase, to practice further thinning of the bunches and advanced ripening until the end of October. The grapes were carefully harvested and placed in boxes for drying for 20 days.
Wine making Fermentation maceration lasted about 20 days. Complete malolactic fermentation followed after racking.
