Description
Organic classic method sparkling rosé from Catalonia, Spain. 11.5% ABV, produced in Palau. 100% Trepat. 0.75L bottle. A Cava born from Spanish tradition, with aromas of cherries and blackberries, enriched with notes of plums and figs, and a slight evolution due to contact with the yeasts. Harvested mechanically, the grapes are destemmed, cooled to 12°C, and macerated for 12 hours. The must is pneumatically pressed to a pressure of 0.2 kg, selected, and stabilized for fermentation at 12-4°C for 15 days. It is racked after alcoholic fermentation and subjected to clarification, tartaric stabilization, and final filtration. Secondary fermentation takes place in the bottle for 9-2 months at the cellar. On the palate, the wine is fresh and accompanied by fruity notes, with a lingering finish.
