What kind of wine it is

Cascina San Pietro Franciacorta Pas Dosé Cuvée Terre dei Trici is a Franciacorta made exclusively from Chardonnay. Crafted according to the strict principles of the Traditional Method, this zero dosage wine displays a fine and persistent perlage, offering a delicate creaminess on the palate. Its aromatic profile reveals clear toasted notes, accompanied by citrus hints of lemon verbena, broom and exotic fruit. On the palate, a pronounced savouriness emerges, well balanced by lively freshness, resulting in an extremely harmonious and precise drinking experience.

Where it comes from

The vines thrive in Franciacorta on moraine-based soils formed from ancient glacial deposits, which impart a distinctive tension to the wine. In Cazzago San Martino, agricultural practices are based on full respect for the environment and the natural biological cycle of the vine. Strict and targeted yield control ensures healthy grapes, capable of expressing the most authentic territorial characteristics, while preserving the identity of the original soil.

How it is produced

The bunches, hand-picked from the oldest vines, arrive at the winery intact and swiftly. The process begins with a gentle whole-bunch pressing to extract only the free-run must. After static decantation, fermentation takes place in stainless steel, while a portion completes the process in small barrels for about eight months. In spring, the final blend is created, followed by a slow maturation on the lees for at least forty-eight months. Its clean profile makes it ideal for pairing with light starters, white fish dishes and cheeses.

This Millesimato Dosaggio Zero is the result of a meticulous manual harvest, with the grapes reaching the winery within just two hours to ensure only the free-run must is extracted. Crafted by oenologist Alessandro Santini, the wine matures for at least 48 months on the lees, gaining a rare and complex elegance. The result is a vibrant traditional method wine, capable of enhancing the richness of Franciacorta in a harmonious sip.

The Cascina San Pietro farmhouse, situated on the road called "Strada delle vigne di Franciacorta", tills grapes and makes wine since 2001, with the maximum respect of environment and the biological grapes cycle in order to get genuine and unadulterated wine, according with the territorial characteristics.

The viticulture, already present during roman ages in our lands, laid, especially in the lower middle-ages (1001 – 1321) , the basis to rich the modern and specialised grapes cultivation now well-known. The "Cascina San Pietro" farmhouse, is located in "Calino", hamlet of "Cazzago San Martino", in the District called "Franciacorta".

The farmhouse start to makes wine from his own grapes in 2001 after restoration of the old farm rebuilded by the PECIS family and occupied since 1970 by the Trici, a very large family, that tilled as a share-cropper the vineyard of an old noble family owner. The vineyard stretches for six hectares (14.826 acres) tilled by Giuseppe Pecis with the maximum respect of environment and the grapes biological cycle in order to get genuine and unadulterated wine, according to territorial characteristics.
