What kind of wine it is

Grechetto Fiordaliso by Roccafiore is a still white wine that represents a pure and defined expression of the Umbrian territory. Made from Grechetto grapes, it reveals an aromatic profile characterised by clear notes of white flowers, pink grapefruit and green apple. On the palate it is dry, marked by a pleasant freshness and a pronounced minerality that extends its persistence. Thanks to its organic and vegan nature, it is the ideal pairing for lean fish dishes and flavourful cheeses, offering perfect balance when served at cool temperatures.

Where it comes from

This wine originates from the hills of Todi, where Roccafiore cultivates its vineyards following a fully sustainable philosophy. The vines sink their roots into white clay and calcareous marl soils, which give the wine a well-structured minerality. The east and south-east facing slopes ensure optimal sunlight, allowing the grapes to achieve balanced ripeness. The rows, trained using the Guyot system with high planting density, help to limit yields and enhance the identity of the original terroir.

How it is produced

Production begins in September with a rigorous manual harvest. In the winery, the grapes undergo gentle pressing and the must is clarified exclusively by natural decantation. Fermentation takes place spontaneously in stainless steel tanks at controlled temperatures, thanks to the action of indigenous yeasts, avoiding malolactic fermentation to preserve the fruit's tension. Ageing involves six months on the fine lees, followed by a final maturation period aimed at stabilising and defining the flavour profile.
