Pairings
We have all the production resources for making wine both in concrete tanks and in stainless steel tanks.
When we receive the grapes, during harvest, all bunches and seeds are kept inside a refrigerating room in order to prevent the start of the fermentation process. We pay special attention to the production details, using first-line oenological supplies.
Depending on the line, we use French oak barriques of 160, 250 and 500 litres, and Slovenian oak casks of 6,500 litres each. The room with the barriques and the room where we stow the finished product have a programmable refrigeration system in order to prevent any sudden variation in temperature.
Lastly, the research and development area is in charge of performing different types of microvinification based on the exploration of selected grapes from different areas of the Uco Valley. Read more
