| Wine making | Soft pressing and fermentation in temperature-controlled stainless steel tanks at 16°C. During the second fermentation, the wine destined for Satèn is characterised by a lower addition of sugar in the liqueur de tirage compared to Brut; the result is a more extraordinary delicacy and finesse of the perlage. |
